I want to try using the RNA-seq data to do the gene fusion analysis in plant. I noticed that most of the recently researches are on human. So whether it is possible to apply similar studies on plants?

Most of the fusion detection tools will take in any reference, regardless of species. For example, TopHat has been used for many different species. TopHat-Fusion is incorported into TopHat2 and is for fusion detection specifically.

You should look at publications from other people working on your species (or a similar species) and see what they use.
