Hello,
I am a graduate student, studying food science at McGill university. I have an option to opt for a bioinformatics course. I would like to know the scope of bioinformatics in food science, so that I can co-relate both of these disciplines to do my PhD? I do have some knowledge of perl and R programming.

Food biotechnology, as far as I know is a HUGE field, second to healthcare in its breadth. Many companies, including Dow Agro, NCGR and Monsanto have regular openings for bioinformatics folks. I'm guessing it's quite a new type of challenge, given the polyploidy in most crops.
You might want to listen to some episodes of taking biotech podcast by Kevin Folta. You'll get some ideas about what are the applications in the field and how bioinformatics relates to them. Look for episodes on molecular breeding, CRISPR/cas9.
