I am new to bioinformatics and am wondering which IDEs do people most commonly use. I primarily intend to use R and Python. RStudio and/or Jupyter for the former; Eclipse + PyDev and/or Jupyter for the latter?

Visual studio (Yes from Microsoft and it is free) is pretty good IDE for multiple things.

Use one where you feel comfortable. I like RStudio for R, and Atom (which is just an editor) for other coding. From what I read, Jupyter is quite good for Python, but I don't think it is an IDE, it is a notebook. Several people don't use IDEs, preferring a text editor + the command line.
