I can't get auto-completion of the tags field in the new site, which doesn't help much in knowing how to tag the posts...

Any ideas what might be happening?

Sorry about that, this feature has not yet been added. It is one of the open issues that we plan to close over the next months or so.

I have the feeling that the number of distinct tags vs. the number of questions has skyrocketed since the switch from SE. So whatever you choose to implement to solve this problem, please add some sort of tag synonyms so that there's some hope of getting back to some sort of canonical tags. (Tag synonyms in SE map tag variants to the main tags, for all questions past and future.)
