Basic information like age, gender, disease stage you can get from SRA Run Selector.

Example: https://www.ncbi.nlm.nih.gov/Traces/study/?acc=PRJNA609278&o=acc_s%3Aa

On the bottom of the GEO pages there is a field with Series Matrix File(s) which is a (unhandy) text file with metadata that are often not being displayed when just browsing the page. I often found valuable information there. Still, there is no guarantee that the data you seek are in the or are even publically available. If not included in the paper (or its supplement) or on GEO you might need to contact the authors.
