Machine Learning with Natural Language Processing for Amino Acids

I am looking for a machine learning training model for Natural Language Processing to go through scientific papers and look for Protein Sequences, amino acids and genes. I already have a script that is able to send a 'get' request for the papers and then pre-process the text removing stop words, stemming, and lemmatization. The next step for me would be introducing the NLP and machine learning. If anyone has any good sources or ideas on where to start it would be appreciated.
