What is your favorite learning resource for NLP relevant to bioinformatics? Emphasis on Biomedical Literature Text-Mining

Ever since my first bioinformatics focused course from my first Masters (Bioinformatics and Systems Biology 2016-2020), I have taken quite an interest in text-mining of biomedical literature. However, despite one of my courses covering this on an intro level, I have yet to learn or teach myself anything substantial around text-mining or other NLP approaches/tools. A few published tools have caught my eye, from BioRED (https://pubmed.ncbi.nlm.nih.gov/35849818/) to the larger movement/hype in large language models that includes some biomedical literature focused/specifically trained LLMs. However, I want to take a stab at teaching myself a more thorough understanding of these methods and existing tools (not only ML models, but also other software tools relevant to NLP or text-mining). Does anyone have any recommendations?
