What gets conserved in sequence?

This may seem a little abstract but I'm in my first real bioinformatics class and I had a conceptual doubt with what really gets conserved in a protein sequence to allow us to use the sequence as a parameter for the actual protein modeling and inferring similarity of different proteins?

Any help would be much appreciated!

Conservation means function... If something is conserved is because it has to have a function
