I'm having a hard time opening a VCF file [Kaviar-160204-Public-hg38-trim.vcf]. Should I be using something other than a text-editor? Any advice?

Files in the bioinformatic field are almost never to be opened by text editors, because the size often overloads their capacity plus any (unintended) manipulation might somewhat corrupt the standardized format (like adding a tab somewhere by accident). Use standard Linux tools like less. More info can be found on google on that matter. Spend some quality time learning the Unix basics.

I downloaded Large Text File Viewer and the file opened immediately and without issue.

If you were after Windows software, it would have been best to state that upfront, else ATpoint’s suggestion are generally the best advice.
