Hello people, how are you? I am looking to upgrade the notebook I currently use for bioinformatics. I have a Dell Inspiron (2017) 14-3467 i5-7ma 16gb RAM and 512 SSD, Ubuntu.

Which of these machines are good for bioinformatics?

You need to add some information about what kind of analysis you are planning to do on your laptop? What is the expected size of the data and number of samples? Your current laptop is already reasonably spec'ed so machines you list are more or less similar with newer intel CPU so they should be able to do similar analyses but would complete them faster.

Macbook Pro would be likely the fastest machine of the lot but it will be limited by 8G of RAM (not upgradable).
